I was in the mood for Chinese food the other night so I decided to make chicken fried rice. It was easy to make, delicious and filling. I really need to add it to our weekly meal rotation.
Chicken Fried Rice can be made with just a handful of ingredients you probably have in your refrigerator right now. I add chicken to the dish because I have men in the house 🙂 Honestly it would be just as delicious without it.
I also added diced red, yellow and orange bell peppers. It may not be traditional but I’m always trying to get more veggies in. Feel free to add bean sprouts, broccoli florets or other veggies you have on hand.
